  • Recipe of the Month - FENNEL & DILL-RUBBED GRILLED SALMON
  • Grilled Salmon

    Be sure to buy the salmon with the skin on, which makes it much easier to handle as it grills. Keep in mind this is a special cut that your fish market or supermarket seafood counter may have to order. What to drink: Try: Columbia Crest 2002 Grand Estates Chardonnay ($11).

    1 tablespoon fennel seeds
    1/4 cup plus 2 teaspoons (packed) golden brown sugar
    3 tablespoons Pimentón de la Vera (Spanish smoked paprika)
    1 tablespoon coarse kosher salt
    2 teaspoons freshly ground black pepper
    2 teaspoons dried dill weed

    Nonstick vegetable oil spray
    1 3 3/4- to 4-pound side of salmon with skin (preferably wild salmon)
    Olive oil

    Finely grind fennel seeds in spice mill or coffee grinder. Transfer to small bowl. Mix in next 5 ingredients.

    Spray grill rack with nonstick spray. Prepare barbecue (medium-high heat). Brush salmon lightly on both sides with olive oil. Rub spice mixture generously over flesh side of salmon. Place salmon, skin side up, on grill rack; cover and cook until fish is slightly firmer, about 8 minutes. Slide rimless baking sheet under salmon to turn salmon over without breaking. Place another rimless baking sheet atop salmon. Using both hands, firmly hold baking sheets together and invert salmon; slide salmon, flesh side up, off baking sheet and onto grill rack. Cover and grill until just opaque in center, about 8 minutes longer. Using rimless baking sheet, remove salmon from grill. Gently slide salmon, flesh side up, onto platter and serve.

    Grilling Guru's Suggestion: To add a different dimension of flavor you can use wood grilling planks. These are available in cedar, pecan and many others and are re-useable. You can find these at some home improvement centers and on the internet. These grilling planks also offer wonderful flavors and aromas to your grilled seafood and are highly recommended!

  • How do you get a positive attitude?

    What is a positive attitude? The simple definition is "The way you dedicate yourself to the way you think." Interestingly, that's also the definition of a negative attitude.

    The more complex definition is "How you choose to dedicate yourself to the way you think, how you choose to dedicate yourself to being positive, and how you choose to dedicate yourself to reacting in a positive way." And your choice must be consistent.

    Most people have a positive attitude some of the time. Few people have a positive attitude all the time. This means some people have a negative attitude all the time. And you know who the positive people are. They're evident by the way they conduct themselves and the way they respond to things.

    But let's get back to you, because in the end, that's who you really care about anyway. Positive attitude is a state of mind, and all the things that surround positive can reinforce it, challenge it, or destroy it. That's another choice.

    Attitude challenges are everywhere, and the closer they are, the more vulnerable you become. Parents, siblings, spouses, and close friends all influence your thinking. Often their problems become your problems. And often, their pity party sends you an engraved invitation and, like a fool, you accept it.

    Don't pity people in the pity party. Instead focus on yourself and your own feelings. The pity party simply stated is pitiful! Embrace your situation and turn it into a win - even if it means jumping into the middle of the negative, engaging the battle a little and emerging victorious in the positive. One of the biggest mistakes you can make with your attitude is leaving a situation angry or grumbling.

    Employees' not talking to one another over petty issues is another big mistake. Spouses using words of hate that they can never take back and reactions to confrontational situations that are left in a negative state cause big problems and major negative attitudes. Think about the last few heated exchanges you've had. What was your response to those situations? How did you leave it?

    This gives you a starting point on defining where your attitude is right now. Aldous Huxley (1894-1963) wrote "It's not what happens to you, it's what you do with what happens to you."

    We are the sum of our experiences and our attitude can bring us to greater heights in our personal and professional lives, or living in the negative can cause lost relationships, poor job performance and a negative outlook on life. Don't be a wondering generality, be a meaningful specific.

    Study attitude, think attitude, and express a positive attitude every day.

Chris is the Warehouse Manager responsible for deliveries, furniture installations, shipping and receiving at OSS. Chris and his wife Charity have a 2 year old son, Andy. They love the outdoors and enjoy trips to Carolina Beach, Pisgah National Forest and he loves to take his Jeep four-wheeling. One of his life goals is too be the best father and husband he can be to his family. We have come to appreciate the never-ending smile you see on his face each day.
