Featured Recipe - Grilled Swordfish with Caribbean Salsa
1/3 cup red onion, minced 3 oranges, peeled with pith removed, seeded and halved 1½ cups of vine ripened tomatoes, chopped and seeded 1/3 cup of fresh parsley, chopped 1/3 cup of fresh cilantro, chopped ¼ cup of shredded fresh coconut (unsweetened) Juice of one lemon Juice of one lime Juice of one orange 3 tablespoons of balsamic vinegar Splash of hot sauce 1/3 cup of extra virgin olive oil 2/3 cup of white wine Thyme sprigs 3 cloves of garlic, minced 3 shallots, minced 6 six-ounce swordfish steaks cut 1 inch thick
Preparation Prepare the salsa by combining the onion, orange, tomatoes, parsley, cilantro, coconut, lemon, lime, orange juice, vinegar, hot sauce and toss. Cover and place in the fridge to set up for an hour before serving.
In a bowl, combine oil, wine, thyme, garlic, and shallots. Add the swordfish steaks to a large sealable plastic bag. Pour the marinade over the swordfish steaks and place in the fridge for 30 minutes.
Preheat grill to high heat (500ºF)
Remove the steaks from the marinade and pat dry. Place the steaks on the grill and cook for approximately 4 minutes per side until opaque at the center. Avoid flare ups.
Serve with salsa on top.
Servings: 6 servings

| Creating Loyal Employees
Loyalty in business is a very powerful concept. Loyalty in a business setting in its most basic sense is the relationship between an employer and an employee. Decades ago employees would stay on a job for a long period of time to build a career but those times have changed. Many employees, especially those in their 20s and 30s don't consider loyalty to an employer to be as important as it once was. Loyalty is the glue that binds an employee to a job and is a function of the respect and allegiance that a business owner and leader must develop in their employees. So how do you create and instill loyalty in your employees? You need to show a high level of knowledge and ability when performing both your operational and leadership functions. Here are some steps to develop loyal employees. Be honest about your lack of knowledge and seek input from others. If you make excuses or blame others for your lack of knowledge or the problem, loyalty will suffer. Demonstrate integrity in your actions and beliefs. You have to be honest and trustworthy. Behave consistently for when you do you show your staff that you're reliable and predictable, and that you use good judgment. Be willing to protect your employees and help them save face. You should never embarrass an employee. Praise them in public and criticize them in private. Not that you shouldn't reprimand bad behavior because not doing so will lead other employees to believe that you have no standards and you'll loose respect. Correct behaviors that are errant without demeaning the employee. A boss that wants to build loyalty will correct an employee's error in judgment or mistake by helping them learn what the problem was and how to correct it in the future. Better yet, help the employee identify the issue before it becomes a problem or results in an error. You will gain that employee's appreciation, respect and loyalty. Be open with your employees. Do you easily share information and ideas with your employees? Or do you withhold key data from them? An employer that openly shares appropriate information that enables their employees to work productively and efficiently will be seen as a boss who deserves an employee's loyalty. | Five Ways to Recycle Shower Poofs
You know those shower scrubbers that you can get at the dollar store and are made out of some sort of polymer? Well, they do go bad at some point. Sometimes they mildew, sometimes they fall apart and sometimes something better comes along. The bad news is that they are not biodegradable. The good news is that we've found five interesting ways to recycle them.
- Dip the poof in paint to create a faux finish or add texture to a ceiling.
- Opening them up will provide you with a net tube with which you can collect seashells for easy rinsing.
- Place drainage stones into the bag before adding them to your potted plants for easy removal later on down the road.
- Open one up and bring it to the grocery store to hold produce thereby eliminating the need for plastic produce bags. This is a much less expensive option than the commercial alternatives like plastic bags.
- Learn how to juggle.
