Featured Recipe - Braised Chicken with Summer Tomatoes
Ingredients:
1 chicken, about 4 1/2 lb., cut into 8 pieces, back and wings discarded
Kosher salt and freshly ground pepper, to taste
2 Tbs. plus 1/2 cup extra-virgin olive oil
1 large yellow onion, chopped
10 garlic cloves, peeled
1/2 cup dry white wine
1 1/2 cups chicken broth
4 fresh tarragon sprigs, plus 2 Tbs. finely chopped tarragon
6 to 8 heirloom tomatoes, about 3 1/2 lb. total, cored
Preparation:
Season the chicken with salt and pepper. In the stovetop-safe insert of a slow cooker over medium-high heat, warm the 2 Tbs. olive oil. Add the chicken, skin side down, and brown, turning once, 7 to 8 minutes total. Transfer to a plate.
Add the onion to the insert, reduce the heat to medium and cook, stirring occasionally, until softened and golden, about 8 minutes. Add the garlic and cook, stirring occasionally, until just golden, about 5 minutes. Add the wine and simmer for 1 minute. Add the 1/2 cup olive oil and the broth, and season with salt and pepper. Place the chicken, skin side up, in the insert and tuck the tarragon sprigs in between. Place the tomatoes on top and bring the mixture to a simmer. Place the insert in the slow-cooker base, cover and cook on low until the meat nearly falls off the bone, about 3 hours.
Using a spoon, transfer the chicken, tomatoes, some of onion-garlic mixture and braising juices to a platter. Garnish with the chopped tarragon and serve immediately with white cheddar grits. Serves 6.
Cook's note: For a southern low-country taste serve over cheese grits. |
| Keep Germs Away with Proper Hand Hygiene
It has been predicted that the Swine Flu virus may return this fall and winter. PURELLŪ Instant Hand Sanitizer is one way to help prevent the spread of germs. Is PURELLŪ Instant Hand Sanitizer active against Swine Flu?
While no hand sanitizer is indicated to prevent Swine Flu, according to the Centers for Disease Control and Prevention (CDC), one of the ways you can help protect yourself from Swine Flu is by practicing good hand hygiene. Specific CDC recommendations include keeping your hands clean by washing with soap and water, or using an alcohol-based hand sanitizer when soap and water may not be available, such as when you're on the go. What is the proper way to practice hand hygiene?
Use soap and water, especially when hands are visibly dirty. Wash hands with soap and water for 15 to 20 seconds.
When soap and water are not available, use an alcohol-based hand sanitizer. Apply enough product to thoroughly wet hands, then rub hands together briskly until dry. What types of germs does PURELLŪ Instant Hand Sanitizer kill?
PURELLŪ Instant Hand Sanitizer kills common germs that may cause illness. Germ kill has been demonstrated in laboratory tests of common bacteria, viruses and fungi. FDA does not currently allow makers of instant hand sanitizers to make claims against specific types of germs due to its concern that consumer's will take away a message that the particular illness caused by these germs will be completely prevented through use of the product. Because germs can be spread in a number of ways and one's chances of actually developing an illness depends on a number of factors, no maker of these products can make that kind of guarantee. However, proper hand hygiene is one of the most important tools to prevent the spread of illness. This is why the CDC and various other organizations recommend hand-washing or use of an alcohol-based instant hand sanitizer, like PurellŪ, when soap and water are not available. To see a video on proper hand sanitizing visit our web site here. Also, visit www.cdc.gov for more information. |
