Featured Recipe - Roast Chicken with Balsamic Bell Peppers
3/4 teaspoon fennel seeds, crushed 1/2 teaspoon black pepper, divided 1/4 teaspoon garlic powder 1/4 teaspoon dried oregano 4 (6-ounce) skinless, boneless chicken breasts 2 tablespoons olive oil, divided Cooking spray 2 cups thinly sliced red bell pepper 1 cup thinly sliced yellow bell pepper 1/2 cup thinly sliced shallots (about 1 large) 1 1/2 teaspoons chopped fresh rosemary 1 cup fat-free, less-sodium chicken broth 1 tablespoon balsamic vinegar
Preparation:
Preheat oven to 450°.
Heat a large skillet over medium-high heat. Combine 1/2 teaspoon salt, fennel seeds, 1/4 teaspoon black pepper, garlic powder, and oregano. Brush chicken with 1 1/2 teaspoons oil; sprinkle spice rub over chicken. Add 1 1/2 teaspoons oil to pan. Add chicken; cook 3 minutes or until browned. Turn chicken over; cook 1 minute. Arrange chicken in an 11 x 7-inch baking dish coated with cooking spray. Bake at 450° until done.
Heat remaining olive oil over medium-high heat. Add bell peppers, shallots, and rosemary; sauté 3 minutes. Stir in broth, scraping pan to loosen browned bits. Reduce heat; simmer 5 minutes. Increase heat to medium-high. Stir in vinegar, 1/4 teaspoon salt, and 1/4 teaspoon pepper; cook 3 minutes, stirring frequently. Serve bell pepper mixture over chicken.

| Take a Break and Refocus
Here are some tips to recharge your batteries when you face a day that can be more challenging than usual.
If you leave the office during the day don't start work immediately upon returning to your office. Take a few minutes to get a soft drink or a cup of coffee, and then get to work. This will give you an opportunity to refocus and increase your productivity.
Set a time limit for when you'll stop working at the end of the day. If you set a time to start and stop work each day and stick to it you'll stay on track and be more productive.
If you spend more time at your desk than away from it, stand up or reposition yourself every hour. Staying in the same position adds more strain to your back and neck. By changing position you'll eliminate the possibility of causing unnecessary wear on your body.
When you hit a roadblock on a project, take a half hour break and work on something else for half an hour. Although you may feel that the harder you work the more productive you are the opposite is true. The more you push yourself fatigue sets in and much of the work you accomplish will have to be redone.
Reward yourself for your accomplishments. Consider it a carrot and the reward doesn't have to be lavish or expensive. Treat yourself out for lunch or end work early one day when you've met the deadline for a big project. Sometimes a simple motivator goes a long way toward meeting your goals.
Know your limitations. Realize that you can't do everything on your own; you'll need to delegate more tasks at some point. If you're struggling to stay current on your work or you feel like you are never caught up it's a clear signal that you need to ask for help. Don't let your pride get in the way of delegating more tasks. Ultimately the quality of your work will suffer if you don't. |
